Ask Chef Kevin

Q: What is your favorite dish to prepare?

A: I so enjoy making braised beef short ribs in red wine. It’s a process, it takes time, it’s a labor of love.

Q: What are some of your favorite foods?

A: Truffles, foie gras, not exactly. While amazing, I prefer simple and nostalgic things… grilled NY strip, bacon cheeseburger & a
cherry coke (mayo and ketchup only please), brownie with vanilla ice cream.

Q: What are some of your favorite kitchen tools?

A: I like to use a serrated paring knife, my kitchen aid stand mixer, and paper towels. I leave wods of paper towels all over the kitchen. (However, it’s ideal for a recovering obsessive-compulsive. Keeps fingers clean and prep area tidy.)

Q: What was one of your first food memories?
A: My dad and I weren’t that close growing up. However, we did connect over food. He would watch “The Frugal Gourmet” on PBS and “Emeril Live”. He also loved to grill and it was often we would enjoy a family meal of ribeye steaks, salad with thousand island dressing, baked potato, and of course, plenty of A1 steak sauce. (Relax. A1 has its place.)
Q: What do you enjoy most about cooking?

A: I truly love serving others and witnessing their enjoyment in my food. It’s exciting! Cooking is hard work and a guest’s delight is incredibly rewarding. I also enjoy the sport of the kitchen, the challenge of the craft, the dance.

Q: Do you have any pet peeves?
A: Quite a few. One thing that annoys me is a messy restaurant bathroom sink. I will often check just for fun.
Q: Name your top 5 favorite movies?
A: I’m very sentimental. Movies often speak to me. Top 5 would be: Remember the Titans, August Rush, We Bought a Zoo, Silver Linings Playbook, and Lord of the Rings
Q: Do you have any favorite tv shows?

A: The Office, Dateline, and I’m truly grateful for the WWE network being on Peacock (it’s nostalgic for this 90’s kid).

Q: What are your hobbies?
A: I’m a drummer. I also do hybrid fitness training and compete in Hyrox and Deka Fit races. (I mean, it’s that or prozac.) I also enjoy food photography and reading personal development books.
Q: What’s something someone wouldn’t know by just looking?

A: I have a fraternal twin brother and I’m left-handed. I currently have no tattoos.
