Your ONE DAY Must Become TODAY

Hello everyone! Welcome to “My Table”. I hope you’re doing well. This month I want to share my thoughts on the infamous “one day” statement, AND, share some culinary insight from a recent trip.

The Main Course

I recently went to Charleston, SC for the weekend. It being a food city I was naturally excited. I made plans to visit several restaurants and see the sites, but, I was pleasantly surprised to have a couple full circle moments.

Allow me to explain.

Fresh out of college, I started my culinary journey in Nashville, TN in 2007. I worked at the Hermitage Hotel under then Executive Chef Tyler Brown. He was the successor to Chef Sean Brock. They both worked in Charleston at the beginning of their careers and have become public fixtures in Southern Cuisine.

I’ve admired and watched these chefs from a distance for 17 years now. Chef Sean has been featured on Netflix’s “Chef’s Table” in addition to publishing several cookbooks.

A couple cool things happened while in Charleston:

1) My hotel was immediately and directly across the street from HUSK (Chef Brock was formerly of HUSK) – I had no idea it was so close. So, eating there on Friday evening was super cool and a bit surreal having only read about it and watched from a distance for all these years.

2) On Sunday I switched previously scheduled dinner reservations to the Peninsula Grill. It’s a big deal in Charleston and has history in it’s culinary lore. The Coconut Cake is know by Martha Stewart, Southern Living, and likely everything in between. Chef Brown worked at the Peninsula Grill early in his career and is featured in their cookbook.

Connecting these culinary dots from past to present were both sovereign and serendipitous for me. But also, quite thought-provoking.

I mean, why did it take so long? So long for me to actually see these establishments. Why was I so content to only read about it in a cookbook or watch from a distance on Instagram? It’s been 17 years since working in Nashville.

Personally, there’s been many a variables that have kept me from a trip to Charleston. Not necessarily Charleston but the idea of. I trust you’re getting the picture here.

My message is this… It’s the idea of one day.

*I’ll get good grades and go to a good school so ONE DAY I’ll…

*I’ll save my money so ONE DAY in retirement I’ll…

*I want that dream job so I’ll make these sacrifices and ONE DAY…

I call BS on all this.

I’m of the conviction that ONE DAY may never come and that at some point our ONE DAY has to become TO-DAY.

Today is the day. Sure, timing is key and critical and wisdom is necessary but what is it we are waiting for. Many a times, we have to just DO.

In fact, a mantra came to me this weekend and I’ll end with it.

Go.
See.
Do.

Don’t put it off.
