Hello everyone! It’s February… Maybe you’ve gotten your chocolates or had a wonderful dinner out with that special someone. Regardless, I hope you have had a great month thus far!

I wanted to share a recipe with you so be sure to check out the video below. I’ve also got a spicy quitting story for you. Here we go…!

The Main Course

My at-home cooking is often much more streamlined and simpler than both my meal prep or dinner party productions. I like to eat well and eat clean as much as possible. This straightforward dish is the perfect example of building flavors. Allow me to explain…

The tongue detects flavors at certain spots on the tongue. I call it 3BS (bitter, sour, salty, sweet). There is also umami (but we don’t have time for that today). : )

Anytime I am creating menus, I think about color, texture, and nuance in addition to classic flavor pairings. (There’s a great book chef’s prefer called “Culinary Artistry” by Andres Dornenburg that highlights these pairings.) I also want a little bit of texture and balance of the 3BS’s.

For example, in this dish, it works like this:

salmon – fresh, naturally “sweet”
sauce – spicy, acidic
butternut squash – sweet, savory
bacon – texture, smoky, balanced

Like a good song, when all these factors combine what you get is perfect harmony in each bite! Food should be enjoyable and this is how you do it!

***Also, I enjoy food photography and have had the privilege to work on several commercial projects over the years. I even have a small studio set up at home with grandiose ideas of producing my own. However, that idea is still simmering. Tbh, I think this picture is pretty terrible, BUT, I’m including it as a way to encourage progress over perfection and to state that done is also better the perfect.

Pro Tip for the Month – On OCD & Anxiety

When I quit my corporate job, ya know, the one with benefits and a 401k, I had no idea what was next. It was months before I learned that the Father had set me up. For success.

It was in this season I learned about real dependence on the Divine, and, about how I’m wired. I was being defined.

Like Paul, and possibly you too, I’ve often wrestled with my wirings. I’ve pleaded to God about the pain. Asked him all the questions.

I’d like to propose our minds are wired a certain way FOR A REASON. What if our wirings are our thorns and they force us into sweet surrender, into a lifestyle of dependence on the Divine.

I mean, it’s better than figuring out life alone and on our own…
